Created in collaboration between the Stoltman Brothers and Against the Grain Spirits, this limited release honours Dominik “Opa” Stoltman’s arrival in Newmore in 1942. Matured for twenty years, it is layered, balanced, and assured, reflecting the perseverance and steady foundations on which the Stoltman family story was built.

Hirundine 12 Year Old – Speyside Single Malt (70cl | 46% ABV)
Matured in American oak casks and crafted in small batches, this Speyside single malt balances tradition with modern identity. Notes of soft vanilla, honeycomb, and orchard fruits lead into a warming palate of malted barley, baked apple, and gentle spice, with a long finish of oak and lingering sweetness.

Like the Hirundine, our whisky embodies a journey across continents and seasons. These birds semi-migrate between South Africa and the UK, braving dark, cold, and often challenging winters north of the Wall, in search of sun, warmth, and new opportunities.
